Chocolate muffins with mascarpone
***RECIPE FROM HERE/ PRZEPIS STĄD*** :D <3 (an awesome site)
ingredients (for about 12 muffins) :
1 and 1/2 cup (250ml cup) of flour
3/4 cup of sugar
1/4 – 1/3 cup of cocoa
1 teaspoon of soda
1/3 teaspoon of salt
1/2 cup of water
1/2 cup of buttermilk or natural yoghurt
1/3 cup of olive or oil
1 spoon of rum (i didn’t use it here)
1 teaspoon of vanilla extract
for stuffing: 125g mascarpone, 2 spoons of sugar, 1 teaspoon of flour, 1 egg
CREAM STUFFING:
mixing mascarpone, with sugar, flour, and egg white
And put it into freeze for 30min-1h
MUFFIN DOUGH:
put sieved flour, sugar, cocoa, soda and salt into bowl, and mix it. Next, make a hole, and add liquids.
Mix all gently

okay, take 5cm muffin forms
put some muffin dough on the bottom – about 1/3 form (about one spoon) and put about one teaspoon of freezed mascarpone. Next, cover mascarpone by more muffin dough. fill about 3/4 form
bake in 175C for about 25min.
tadah~ done (i used some white chocolate as a bonus, cause i like white chocolate ;3; )
inside:
Yeast croissants with cherries

ingredients:
250g cake flour
1/2 packet of butter
1/4 mug (250ml mug) of warm milk
25g fresh yeast
1 egg
2 spoons of powdered sugar
1 teaspoon of vanilla extract
inside: you can put cherries, chocolate, marmalade etc
mixing butter and sieved flour
defrosted cherries (there is out of season for fresh ones D: )
beat the egg and sugar
Add yeast, egg, and vanila extract to the flour and butter, and start kneading…
…till it won’t be sticky anymore.
put the dough in a bowl, cover by foil and put to the fridge for about 2h
make 3 dough balls, roll them, and cut each one into 8 triangle pieces.
put cherry on the wide side, and roll into croissants
whisk one egg, and smear on croissants by brush. Add cane sugar on top
(also you can do nothing here, and just add powdered sugar on top after baking)
Bake in about 180C for about 10-15min
